Chicken & Sausage Gumbo

  • 1 large hen (cut & seasoned)
  • 1 rib celery
  • 1 medium onion
  • 2 cloves garlic
  • 1 medium bell pepper
  • 3 tsp. PERIOUX Seasoning
  • 1 lb sausage/andouille
  • 1/2 cup PERIOUX Roux
  • 2 qts water


Fry hen to light brown. Dissolve roux in water over medium heat. Add chopped vegetables, seasoning, and meat. Bring to boil and cook for 1 1/2 to 2 hours. Serve over cooked rice.
