Nicholas Perioux, the founder of Perioux Seasoning, grew up in his ancestral Cajun kitchens and family restaurants, cooking with his grandparents and parents, restaurateurs who passed along their love of Cajun culture, food, and family to the young entrepreuner. Nicholas’s goal was to bring an authentic seasoning product to the market that represented the tastes and smells of his South Louisiana home. After extensive product testing, which included the most discriminating family members and Cajun cooks, he brought his special seasoning to the public. It soon became the favorite of professional and home chefs because of its rich, earthy blend of spices. Most cooks who prefer Perioux’s Seasoning to other brands appreciate the blend’s ability to add genuine Cajun flavor to the cuisine without overwhelming it with salt.

The young business was quickly growing as Nicholas brought his custom seasoning to restaurants, grocery stores, and special events from Beaumont, Texas to Baton Rouge, Louisiana. Nicholas also began taking business courses through McNeese State University, pursuing a degree in business and marketing to enhance his ability to bring Perioux Seasoning to an even broader audience and expand the product line. All of that progress came to a screeching halt one cold December night in 2004. As Nicholas and a friend were locking up his family restaurant in Lake Charles, two gunmen emerged from the shadows and threatened them. Nicholas withdrew his gun to defend himself and his friend and shots were fired. As the gunmen ran away, Nicholas realized he had been shot in the gun battle and drove himself to the nearest hospital. Doctors agreed that this quick thinking probably saved his life. His injuries were extensive, requiring surgery, physical therapy, many doctor visits, and more than one year of his life for full recovery. During this time, he watched his seasoning business stagnate, but he refused to feel defeated. During the midst of the tragedy, his faith in Jesus Christ encouraged him, and he claimed Psalm 37:4 “Delight thyself also in the Lord: and he shall give thee the desires of thine heart,” as his special promise from God. He continued to find His joy and strength in God, knowing that God would restore his health and his life.

With God’s strength, Nicholas began to recover his life and his business. He earned his degree from McNeese State University and was even awarded the inaugural McNeese State University Entrepreuner of the Year Award, a recognition his professors created to honor his commitment and development of Perioux Seasoning. He began to diversify his business portfolio, expanding to construction and real estate development. Nicholas has also become a well-known motivational speaker, sponsoring Elevate, a weekly Bible study targeted to those who seek to improve their lives through service to God, and speaking at such events as Lake Charles Profit and Loss.

Through this growth and change, Nicholas has always had a special place in his heart for Perioux Seasoning, his first business, the one that is most inspired by his Cajun heritage. He has continued to grow the business and has found a unique niche in custom labels, which can commemorate special events, such as weddings, family reunions, and charity events, as well as promote corporations, organizations, and church and civic groups. Additionally, Nicholas has expanded the product line to include Perioux Roux and is currently developing fish fry and seafood boil.

Nicholas has seen God’s hand on his life and on his business, and it is his desire to share that with you, one seasoning can at a time. Just as Nicholas’s ancestors passed down the authentic Cajun flavor of Perioux Seasoning to him, he wants to pass it along to you.
